Culinary Students to Serve a Taste of
Atlantic Canada
at Vancouver 2010 Olympic Winter Games
During the Vancouver 2010 Olympic Winter Games,
Atlantic Canada House will welcome visitors with a
Taste of Atlantic Canada, prepared and served
by the region's culinary schools.
Three times daily, culinary students from across
Atlantic Canada will prepare and serve complimentary
food samples using product from the region. Students and
instructors from the College of the North Atlantic (NL),
Sobeys Culinary Centre (NS), Culinary Arts Program at
the New Brunswick Community College (NB) and Holland
College's Culinary Institute of Canada (PE) will
be using their creativity and training to bring a taste
of the East Coast to visitors at Atlantic Canada House.
"We are pleased to have the province's best culinary
students and instructors from the College of the North
Atlantic treat our guests at Atlantic Canada House with
the unique tastes of Newfoundland and Labrador cuisine,"
said the Honourable Terry French, Minister of Tourism,
Culture and Recreation. "From traditional recipes to
nouvelle Newfoundland and Labrador fare, this is a great
opportunity to promote our province's food industry, the
products we have available, and the kind of culinary
experiences visitors can expect when they travel here."
During Atlantic Canada House operations, most menus
will be pan-Atlantic in nature; however one day has been
designated for each province to feature specific recipes
and products. Provincial Days at Atlantic Canada House
are as follows: Nova Scotia Day - February 16, Prince
Edward Island Day - February 18, New Brunswick Day -
February 23, and Newfoundland and Labrador Day -
February 26.
"This is an incredible experience for the culinary
students," says Kevin Boyce, Culinary Project Manager
for Atlantic Canada House, "There is a sense of pride in
this opportunity to showcase our culinary talents and
the products harvested in our region to an international
audience".
The Taste of Atlantic Canada daily sampling at
Atlantic Canada House will take place from February
13-27 at 11:30 a.m., 2:00 p.m., and 5:00 p.m. at the
venue, on Granville Island, Vancouver. All culinary
sampling is free to the public.

BACKGROUNDER
Atlantic Canadian Culinary Schools
College of the North Atlantic's culinary arts
programs are offered through the School of Industrial
Trades. Over the past three years, CNA has graduated a
total of 141 bakers and cooks at the Bay St. George,
Burin, Seal Cove and Prince Philip Drive, St. John's
campuses. These graduates have gone on to establish
themselves in various professions throughout the food
industry and have won numerous provincial and national
awards of distinction.
Sobeys Culinary Centre is focused on developing
culinary expertise and the delivery of exceptional food
and wine experiences. Nova Scotia Community College (NSCC)
offers a range of culinary programs and courses
including Culinary Arts, Baking and Pastry Arts,
Boulanger and Baking Arts, as well as Food and Wine.
Programs and Courses are offered at its Sobeys Culinary
Centres located at campuses across Nova Scotia.
Culinary Arts program at the New Brunswick Community
College (NBCC) St. Andrews Campus introduces
students to culinary excellence, teaching quality
restaurant and catering operations that show the bond
between cuisine and service. The school's two-year
program opens students to a colourful culinary spectrum
that includes baking, pastry creation, butchery and meat
cookery, as well as menu design and planning and
restaurant business courses. Students achieve their
potential by training in professional kitchen
environments, including the McCain Centre for Culinary
Training, and Lady Dunn Dining Room. While gaining
experience working with guest chefs, students learn
dynamic skills to provide the ultimate in exceptional
culinary art.
Holland College's Culinary Institute of Canada is
a training facility for the two-year Culinary Arts
students and students in the one-year Pastry Arts, as
well as students in the Applied Degree in Culinary
Operations program. The Holland College's Culinary
Institute of Canada was the first college in Canada to
offer an Applied Degree in Culinary Operations, and the
first college in Atlantic Canada to offer an applied
degree.
